Science teaches that time slows as gravity increases so wouldn't that explain Gen 1?

No, no... there would be no 'space' to look at Earth from. The entire universe was created at once. At that moment, ALL places were ONE place. Time dilation would have affected everything in the same way, so in effect there would be no time dilation.
